On The Rocks: The Geology Of Beer, Wine, And Spirit Alcohol

This course provides students with an introduction to the geology of beer, wine and distilled spirit alcohol. The course examines how geological factors such as bedrock composition, topography, water, soils, vegetation, and climate influence the production of fine alcoholic beverages. Course content explores global climate changes and environmental history and their influence on distilleries, breweries, and vineyards. Special emphasis is placed on developing a sense of place in the bluegrass region of Kentucky and the influence of the local geology and water resources on the success of the bourbon industry, vineyards, and craft brewing, including linkages with the Jim Beam Institute (https://beaminstitute.ca.uky.edu).
